2 tablespoons soy sauce
2 teaspoons sugar (optional)

How To Make
* Black pepper fried in a skillet until fragrant. Set aside. The crabstaste best when deep fried in very hot oil first - deep fry until allsides are red. Drain and reserve the oil. For soft-shelled crabs,crabs dry, cut each into 4, coat with flour and fry until lightlybrowned and crispy. Heat a frying pan, put butter, and aftermelting and hot, add garlic, ginger, red chilli and stir fry for threeminutes until fragrant. Add oyster sauce, soy sauce and sugar andstir well before adding the pepper. Saute a few seconds in a large fire, enter the crabs and stir fry one minute longer. Serve withgarnish.
